Chaos White 2016
South-East of Cape Town lies the Elgin Valley, an area mostly known for its production of Apples and Pears. In recent years however, there have been established several vineyards here as well. The high altitude and the continental climate together with the presence of several lakes and rivers makes this an ideal area in growing grapes for the production of wine.
Elgin Ridge was established in the Elgin valley by the English couple Brian and Marion Smith in 2007.
Tired of the city life in London with an unfulfilled dream lingering, they finally took the step and bought an old farm in Elgin Valley where they planted their first Sauvignon Blanc vines in 2007. Today the area has been expanded with both Semillon, Chardonnay and Pinot Noir. The vineyards are located 282 metres above sea level which gives the area cooler climate conditions similar to that of Northern France.
The vineyards are now certified both Organic and Biodynamic, meaning no usage of any chemicals in the vineyards at all. The pest control in the vineyards are mainly done by a group of ducks working their way trough the vineyards.
Chaos White 2016 has already received great reviews by several wine professionals and magazines, and it is not easy to come by because of the low production.
It is a cool climate blend of Sauvignon Blanc and Semillon made with a degree of skin contact which provides both structure and complexity.
The Sauvignon Blanc grapes are hand picked and whole bunch fermented in oak without Malolactic fermentation. The Semillion grapes are fermented on the skins in open steel tanks. They are then blended and stored in new oak for about 8 months. The wine is unfiltered.
Chaos White 2016
Aromatic and very complex on the nose, dominated by lemon curd, ripe yellow plums, white flowers and ginger with hints of baked apples, butterscotch and green herbs. A full bodied and complex wine with a long lingering mineral driven finish.
